Jerusalem Artichoke also called sunroot, sunchoke, or earth apple is a species of sunflower native to central North America. It is also cultivated widely across the temperate zone for its tuber, which is used as a root vegetable.
Jerusalem artichokes are DELICIOUS when roasted. When you bite into them, you might think it tastes like a juicy crispy potato, but in a few seconds, you really taste the difference. Jerusalem artichokes are nutty, slightly sweet, complex, but mild at the same time. Very different from a potato.
